Công thức làm bia ở nhà từ whole grains ..
Dụng cụ
- 4-5 gallons cooking pot
- accurate thermometer
- 5 gallons water cooler with bottom valve (home depot)
- home made filter
- 6 gallons bucket with lit
- tranfering liquid hoses
- 50 beer bottle with caps or 5 gallons pressure tank
vật liệu
- 10 lbs of crushed grains (8.5;two row, .5;crystal 20, .5; biscuit, .5; munich .... my recipe)
- 8 oz of pellet hops
- 1 oz of beer yeast
- good clean drinking water
- 10 lbs of ice
- 2 oz of priming sugar .. fine corn sugar

- transfer 3.5 gallons of water to cooking pot, heat up to 167-170 degree F.
- Insert the home made filter into the home depot cooler from the inside.
- transfer 3.5 gallons of 167 degree F water into the cooler
- slowly pour the crushed grain into the cooler, make sure no clum, 10 lbs of grain into 3.5 gallons of water should give you the consistency of oat meal texture.
- the temperature of the oat meal should be between 145 - 155 F. this is a smashing temperature, at this temp, the grain release sugar/carbohydrate. Close the lit and let it smash for 1 hr.
- During this time, transfer 1.5 -1.75 gallons of water into another cooking pot and heat it up to 170 F. put 4 oz of dry hops in a mesh bag and tie up.
- after one hour of smashing the grain, insert the transferred hose into the cooler outlet and let it drain into the cooking pot (4-5 gallons pot). let the liquid out slowly.
- with the 170 F water on the other cooking pot, pour 2 cups of hot water into the cooler every 5 minutes until all hot water are transferred. this procedure normally took from 1 to 1.5 hrs .. until all liquid has been drained from the home depot cooler.
- place the cooking pot on the stove and heat it up all the way to boil, place 4 oz of hop in a mesh bag and toss into the boil for flavor. watch for spill over !!! you will see lot of foam before it boil, the foam mean that you have successfully extracted sugar from the grains. let to liquid boil for 1 hr+.
- after 1 hr of boiling, fill the sink with cold water and place the hot cooking pot to cool it down to room temp or you can touch the side of the cooking pot. if you dont have sink that big, use the bath tube or buy a copper cooling coil.
- place 10 lbs of ice into the fermenting 6 gallons bucket, and pour the cooling liquid into it (remove the mesh hops) and stir until all ice are gone. the objective is to cool the boiling liquid, ASAP, to 50 degree F or lower.
- once the liquid has been around 50F, now is the time to pitch your yeast in the liquid. dont stir, just shake the bucket unit all yeast has been wetted and sink to bottom.
- cover the bucket with its lit and let it ferment for 1 week in a cool, control area (find a closet in the middle of your house is the best location)
- after 1 week of fermentation, add 4 more oz of hop in a mesh bag and drop into the bucket (dry hopping) and let it fermented for another week.
- now you have beer but flat beer = no bubble
Packaging, with bottles or 5 gallons tank
for bottle, you will need 50+ clean bottle with caps
- Transfer the beer into another bucket for bottle filled.
- boil 6oz of water and add in 2 oz of priming sugar (this will make bubble in bottle)
- pour the priming sugar + water into the beer and stir lightly.
- tranfer all liquid into bottle and cap it
- let it sit for 10-14 days, to make bubble, and place into the frid to enjoy
For 5 gallon tank
- boil 6 oz of water and add in 2 oz of priming sugar.
- transfer beer into the 5 gallon tank, after you see about 1 gallon of beer in the tank, add 1/2 of the priming sugar into the tank, and the second half when 2/3 of tank has been filled.
- close the tank lid and pressurize.
- let it sit of 10-14 day, to make bubble and place into the frid to enjoy ..
