Taro Rice Pudding (hoangtam/tt): Peel 1lb taro & cut into bite size pieces. Steam taro pieces over high heat for approx. 15mins or until tender. Gently toss cooked taro with ½C sugar & rest for at least 1h. In a large pot, bring 2 pandan leaves, knotted + ½ts salt + 4½C water to a boil, add 1C sweet rice aka glutinous rice (rinsed) & simmer for 10mins. After 10mins, check the rice, it should be cooked (transparent) on the outside but still white on the inside => add 1½C sugar. Simmer for another 5mins before adding the taro mixture. Continue to simmer, stirring occasionally for another 15mins or until the rice is cooked. Served with pandan coconut milk. Pandan Coconut Milk: In a saucepan, bring 1 can coconut milk + ½ts salt + 1ts sugar + 3 pandan leaves, knotted to a boil. Add cornstarch mixture (1ts cornstarch + 3tb water) & mix well until the milk thickens.

Nấu chè này sao khoai hay bị nát á Sheen ... ... bởi vậy ht/tt mới chỉ hấp khoai rồi xóc đường trước ... còn người khác thì chỉ nấu nếp vừa chín là tắt bếp đậy nắp nồi để cho nếp mềm rời mà không dẻo quẹo mau ngán ...
