How to Make Instant Pot Chawanmushi (Namiko Chen) => Egg Mixture: 1¾C/400ml dashi (Use kombu dashi for vegetarian) - 3 large eggs - 1ts mirin - 1ts Usukuchi/Light Color Soy Sauce (Or use regular soy sauce or gluten-free soy sauce for GF) - ½ts kosher salt - Chawanmushi: 1 chicken thigh 3.4oz/96g (skip for vegetarian) - 5 shrimp 2.6oz/73g (skip for vegetarian) - 2Tb sake (1Tb each for thigh + shrimp) - 1.4oz/40g carrot roughly 1.5” - 5 stalks mitsuba/Japanese parsley - 2.3oz/65g shimeji mushrooms (or any mushrooms) - 1in Kamaboko/fish cake (skip for vegetarian)
