Bánh Kẹp Lá Dứa - vietnamese style:
Ingredients:
- 1 cup or 125gr all purpose flour - 1 cup or 120gr tapioca flour (bột năng) - 1/2 tsp corn starch - 1 tsp Alsa French baking powder (or regular baking powder) - 1 can 14oz coconut milk - 2 eggs - 8 Tbsp sugar - 1/2 tsp pandan extract - 1/4 tsp vanilla extract - 1/2 cups bakers moist shredded coconut flakes
Sift all dry ingredients together in a bowl. Beat eggs with sugar until sugar is dissolved. Add coconut milk. Mix well. Add 1/4 of dry ingredients, blend and continue to do so for the rest of the dry ingredients. Add pandan and vanilla extracts until thoroughly blended. Mix in coconut flakes. Let the batter rest for 30 minutes.
